Healthy Option Pancakes

SERVES 2 (4 mini pancakes pp,  1 large pancake pp or, two waffles)


What:
1/2 cup tapioca flour
1/2 cup almond flour (ground almonds)
1 tsp baking powder
1/2 tsp ground cinnamon
2 eggs
1 tsp vanilla extract
1/4 cup apple sauce

With:
1 bowl
1 mixing spoon
1 non-stick frying pan
Cup and spoon to measure

How:

Mix dry ingredients
Mix wet ingredients.
Fold wet into dry to add air to the mix.
Fry on medium low heat. Use coconut oil if needed.

Why not…?

Serve with a knob of ghee, fruit, a sprinkle of cinnamon, chopped nuts and maple syrup.

Throw a handful of blueberries or chocolate chips in there before cooking.

Make waffles too! Same as above, follow your waffle maker instructions (I set mine to a medium heat and cook for 5-7 minutes)
