Garlic Mushroom & Spinach Pesto Pasta

Serves 2

What:
200g pasta
3 large mushrooms
1 garlic clove
a handful of pine nuts
a fistful of spinach
3tbs pesto
Salt
Pepper

With:
1 pan
1 frying pan

How:
Add pasta to some lightly salted boiling water and cook (depending on the pasta, around 10-15 mins).

Meanwhile, melt butter in frying pan, slice and add the mushrooms, then finely chop and add the garlic. Season with pepper.

After a couple of minutes, add spinach to the garlic mushrooms.

When the pasta is cooked, drain, and add the pine nuts, pesto and mix in with the garlic mushrooms and spinach.

Serve.
