Mac n’ Cheese needs no introduction…
2 cups of pasta
1 cup of milk
1 tbsp butter
1 tbsp flour
1 tsp wholegrain mustard
2 tsp oregano
2 tsp spicy italian herb mix
75g Mild Cheddar
Cover pasta with boiling water in a pan, add salt (approx. 1 tsp), and simmer on a medium heat until cooked (usually around 8 minutes).
In another pan, on a medium heat melt the butter and then add the flour and with a whisk mix into a smooth paste.
Gradually add the milk, stirring gently and regularly.
Once the sauce thickens, add the wholegrain mustard, pepper (to your liking) and mix in the mild cheddar followed by the gorgonzola, oregano, and spicy Italian herb mix.
Drain the pasta and mix together with the cheese sauce.
Once served, sprinkle extra of that spicy Italian herb mix for a subtle taste kick.
